Thyme

A low, tough, aromatic herb with tiny leaves and pale pink flowers that draw bees by the hundred.
In the garden
Full sun and poor, dry, stony soil. It dislikes wet winters and thrives in rock gardens and between paving stones.
In the kitchen
Add whole sprigs to stocks, stews and roasted vegetables; the leaves strip off easily when cooked.
Take care
- Food amounts are fine.
- The concentrated oil is strong and can burn the skin if used undiluted. It is not for swallowing.
